TST: Use other Python versions

Summary

For https://gitlab.indiscale.com/caosdb/internal/all/-/issues/1269. Add Python 3.8 and Python 3.10 to unit tests via the respective docker images.

Focus

Only adds additional steps to unit-test stage. Similar to Pylib, tox and Python3.X images seem to be incompatible, so use plain pytest and manual installation of requirements instead.

Test Environment

Verify that

a) the new steps succeed b) execute the correct Python versions
