ENH: table_json_conversion/xlsx_utils.py: data array schema generation

Summary

Implement caosdb/customers/dimr/management#238: Take into account that data array schema is different from the model schema.

Basically, this is just the new function array_schema_from_model_schema(model_schema: dict) -> dict, plus documentation and tests.
